Rice Paper Roll-Ups Recipe

Ingredients

  • 2 Rice Paper Sheets
  • 1/4 Cup Sliced carrots
  • 1/4 Cup Sliced bell peppers
  • 1/4 Cup Shredded Cabbage
  • 1 Tbsp Peanut Butter
  • 2 Tbsp Red Chilli Sauce
  • 1 Tbsp Dark Soya Sauce
  • 1 Tbsp White Vinegar
  • 1 Tbsp Honey
  • 2 Cups Boiling Water

Steps

  1. In a bowl, mix together the peanut butter, red chili sauce, dark soya sauce, and honey to make the dipping sauce. Set aside.
  2. In a deep bowl, bring 2 cups of water to a boil.
  3. Once the water is boiling, reduce the heat to low to keep it warm.
  4. Carefully submerge both rice paper sheets into the water for 2 seconds. If your bowl is not large enough to fit both sheets at once, you can submerge them one at a time, rotating them and counting 2 seconds for each section.
  5. Carefully remove the rice paper sheets from the water and place them on a plate or counter, with the smooth side facing down.
  6. On one of the rice paper sheets, add a layer of shredded cabbage, sliced bell peppers, and sliced carrots. Leave about an inch of space at the top and bottom of the sheet.
  7. Roll the rice paper sheet tightly, starting from the bottom and rolling towards the top. Be sure to keep the fillings in place as you roll. The rice paper will stick to itself and seal the roll.
  8. Repeat the process with the second rice paper sheet.
  9. Slice the roll-ups into bite-sized pieces, if desired.
  10. Serve with the prepared peanut dipping sauce.
